Now when it comes to salad’s I can take them or leave them, I’m not a huge lover and my salad usually consists of some cheese, a bit of beetroot, some tuna some pasta and some potato salad, in fact the potato salad is the main thing dominating my plate and I just love making it to as it always tastes a hundred times better than those rubbish ones you get in the supermarket. So I am going to share my recipe with you, I don’t mind doing this as I have about three recipes for potato salad and I’m by no means sharing with you my award winning potato salad recipe just my good potato salad recipe.
Ingredients
- 400g of new potato’s washed and cut into halves or quarters, whatever you prefer.
- 2tbsp low fat mayonnaise
- Half a red onion finely chopped or diced
- Half a tsp of lemon juice
- A hand full of freshly chopped chives
- 1tbsp of creme fraiche
Preperation
- Place the new potato’s in a pan of lightly salted water and simmer or boil until they are soft
- Drain the potato’s and add to the rest of the ingredients in a bowl
- Mix up fully
- Serve
See I told you, this is probably the easiest thing you will ever make and yet it will taste so delicious.I am going to give you one more recipe for potato salad and this one is for everyone who likes their food spicy
Spicy Potato Salad Recipe
Ingredients
- Some new potato’s washed and halved or quartered ( Your choice)
- 1tsp of dill relish
- 6-8 black olives
- 6-8 green olives
- 1 jalapeno pepper diced into tiny pieces
- 1 small onion chopped
- 1tbsp of mayonnaise
- 1tsp of mustard
- Salt and Pepper
Preperation
- Boil the potato’s in hot water until they go soft
- combine the first 5 ingredients in a bowl and mix well
- Combine the mayonnaise, mustard, dressing and salt and pepper in another bowl
- Pour contents over potato’s
- place in fridge and leave to chill for an hour or so.
There you have it a perfectly hot and spicy potato salad for the brave souls among us. My other potato salad recipe is a Greek potato salad recipe but I will save that for myself thank you.Good luck preparing that and I hope you enjoy it.
