Chicken is perhaps one of the most commonly used white meats in the world due to its relatively cheap cost and also its taste and easy ways in which to cook.It is usually fairly low in fat and has a high protein content, as such this makes it an ideal food source. Chicken is also one of my favourite foods to cook with and I’m going to start out by showing you some of my favourite recipes for Chicken Breast.

Pancetta Wrapped Chicken Breast

This is one of my favourites and although it looks posh and like you have spent a lot of time on it, it does in fact only take around 35-40 minutes to do, but the results always look fantastic and get good comments from the people i have served it too.

Ingredients:

  1. 4 skinless and boneless chicken breasts
  2. Cranberry sauce
  3. 16 slices of pancetta
  4. Salt and Black Pepper
  5. Olive oil
  6. Cheese

Preperation

  1. Preheat the oven to 200 oC
  2. Flatten the chicken breasts slightly with a meat mallet
  3. Spread one tablespoon of cranberry sauce over each chicken breast
  4. Placing the pancetta strips out on the chopping board, lie the chicken breast on it then wrap tightly with the pancetta
  5. Repeat with the other chicken breasts
  6. Lightly grate some cheese on top of the breasts
  7. Drizzle some olive oil on them
  8. Place on a baking tray in the middle of the oven for approx 25 minutes

Simple, easy and effective. Add vegetables to it to make a meal.

This next one is again one of my favourites and is the only meal I order when in a Chinese restaurant.It is so easy to do.

Lemon Chicken

Ingredients

  1. Chicken breast strips
  2. 2tsb cornflour
  3. 1 egg white
  4. Salt
  5. Groundnut oil
  6. 4 lemons
  7. Chicken stock
  8. 1 tbs sugar
  9. 1 tbs soy sauce
  10. 1 crushed garlic
  11. 1 chili chopped

Preperation

  1. Put the chicken, egg white, cornflour, salt and a little oil in a bowl and mix thoroughly, leave to soak for 20 minutes.
  2. Heat a wok and add some groundnut oil and heat till smoking
  3. Remove from heat and add chicken, make sure to turn constantly to stop it sticking, when nice and white drain into a bowl and leave.
  4. Clean the wok and add stock, lemon juice and sugar with the garlic and chilli, get to the boil and add in the cornflour,simmer for a few minutes then add the chicken, stir fry to make sure the chicken is cooked and add pepper.
  5. Add to rice for the perfect lemon chicken.

This one is only for you spicy lovers out there.

Hot Charred Chicken Breast

Ingredients

  1. 4 boneless chicken breasts
  2. Butter
  3. 1 tsp garlic powder
  4. 2 tsp onion powder
  5. 1 tsp cayenne pepper
  6. 2 tsp paprika
  7. Salt
  8. Black Pepper
  9. Ground cumin
  10. 1 Chopped Chili

Preperation

  1. Slice the chicken breast in half and flatten slightly with a meat mallet, or your hand
  2. Melt the butter in a small saucepan
  3. Combine all the ingredients above into a bowl and mix thoroughly and then sprinkle with black pepper.
  4. Heat a large frying pan over a high heat for around 5 minutes
  5. Drizzle 1 tsp of melted butter onto the chicken breasts
  6. Place breasts in pan an cook until starting to blacken
  7. If you wish you may use whatever ingredients are left in the bowl to put on top of the chicken.
  8. Serve with rice
